Heirloom Summertime Chicken Salad

The delicious heat of the summer just begs for cool food. Nothing says simple and refreshing quite like a good chicken salad, served on a bed of greens or a fresh, buttery croissant. This recipe is deeply nostalgic to me as it’s a tradition that’s been passed down from my mother, who served a version of this recipe often when I was growing up. The grapes bring a cool, sweet, and refreshing pop to every bite, while the simple roasted chicken and a kiss of salt, freshly ground pepper, and mayonnaise bring on the savory.  Every bite is bursting with flavor and filled with delicious memories.  

The beauty of this recipe is that it’s never been written down. I learned how to make it from watching my mother, and I’ve only slightly adapted it over the years. I’ve found that keeping it very simple, without relying on “fancy” ingredients or techniques, produces the mouthwatering results. My hope is that you take the base ingredients and experiment with how you like it, creating the perfect version to nourish yourself.

Ingredients

Roasted Chicken, Shredded or Cut

Cold Green Seedless Grapes, Halved

A Pinch of Salt

Freshly Ground Pepper

Mayonnaise

Directions

Mix your ingredients together. I suggest you start sparingly with the mayo and continue stirring and adding more until it’s the right consistency for you. Enjoy!
